To me, superfoods are wonderfully nourishing foods that pack a nutritious punch. When you’re feeling like a breakfast that’s healthy in every single way then a superfood bowl is perfect.

I tend to start my day with little to no carbs, allowing for plenty of wiggle room through the day. So, this bowl also happens to be low carb and keto diet friendly. 

Superfood Breakfast Ingredients

Ingredients for superfood breakfast bowls

Here are some ideas to include in your Superfood Breakfast Bowl. 

  • Avocado
  • Spinach, Kale or other green leafy vegetables
  • Zucchini
  • Leek, Onion, Garlic
  • Nuts – walnuts, almonds
  • Eggs
  • Chia Seeds
  • Smoked Salmon 
  • Butter, Coconut Oil
  • Full Fat Dairy – cream, sour cream, yoghurt 

Below you’ll find the recipe of what I included in my breakfast bowl, but feel free to mix and match and include ingredients listed above instead.

Superfood Bowl For Breakfast – Recipe

  • Leek, washed and chopped
  • Zucchini, washed and chopped
  • Eggs
  • Cream
  • Avocado
  • Smoked Salmon
  • Butter or coconut oil, for frying 
  1. Heat butter or coconut oil in a frying pan.
  2. When hot, cook the leek and zucchini until softened and golden to your liking. 
  3. Remove to a bowl, cover with a lid to keep cool and then cook your eggs. 
  4. Whisk eggs together with cream until smooth. 
  5. Heat more butter or coconut oil in a frying pan and cook the eggs, scrambling until they are done to your liking. 
  6. Move to the bowl with the zucchini and leek.
  7. Complete the superfood breakfast bowl with a portion of avocado and smoked salmon.

Instructions

  • Leek, washed and chopped
  • Zucchini, washed and chopped
  • Eggs
  • Cream
  • Avocado
  • Smoked Salmon
  • Butter or coconut oil, for frying 

Notes

  1. Heat butter or coconut oil in a frying pan.

Peanut Butter Chocolate Fudge is an awesome take on the best dynamic duo out there! You cant go wrong with Peanut Butter and Chocolate!

Fudge is perfect this time of year!  We also love to make this Reese’s Fudge, Fantasy Fudge, and Cookies and Cream Fudge are just a few of our favorites!

Peanut Butter Chocolate Fudge

Peanut butter and chocolate is my favorite combination.  Which is why it also explains my obsession for these Peanut Butter Bars.  There is just something about the two flavors that combine to make something incredible and delicious.  This fudge instantly became a personal favorite.  I love the peanut butter and chocolate that is swirled together.  This fudge brings you the best of both worlds and is creamy, delicious and SO easy to make!

How to make Peanut Butter Chocolate Fudge

  • In a saucepan over low heat melt the peanut butter chips with one cup sweetened condensed milk.
  • In a small saucepan over low heat, melt chocolate chips with remaining sweet and condensed milk. Remove from heat, add vanilla and stir until smooth.
  • Spread peanut butter mixture evenly in your lined 8×8 inch pan. Use a knife and create a swirl through the top of the fudge. Chill for 3 hours or until firm

How to keep Fudge Soft

The most effective way I have found to keep my fudge soft, is by individually wrapping the pieces of fudge with wax paper, and storing them in an air tight container.

DO I NEED A THERMOMETER FOR THIS FUDGE?

You can make this fudge without a thermometer.  You bring the mixture to a full rolling boil stirring constantly for four minutes.  However you can use a thermometer if you would like and cook it until it reaches 234 degrees.

Peanut Butter Chocolate Fudge

Ingredients
  • 2 cups peanut butter chips
  • 1 (14 ounce can sweetened condensed milk)
  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • ¼ cup semi sweet chocolate chips

Instructions
  1. In a saucepan over low heat melt the peanut butter chips with one cup sweetened condensed milk.

Cinnamon Roasted Almonds Recipe

These cinnamon roasted almonds make the perfect healthy snack or sweet treat. I’ve made a couple of batches in the past week and the family have adored it every single time.

You will too if you’re a fan of cinnamon sugar sweet treats and you’ll be pleased to know how easy they are to make. 

It’s simply a matter of briefly whisking the egg white until frothy and then whisking through all the other ingredients. Pop it all onto a greased baking tray and cook for 15 minutes a time, tossing around and making sure the almonds are in a single layer and all the cinnamon goodness is evenly distributed.

If you’re wondering what to do with your leftover egg yolk, I usually add it do scrambled eggs or an omelette mixture – so there’s no wastage. 

These almonds make a great holiday treat or gift, but are also wonderful to enjoy as a snack all year around. 

Low Carb Cinnamon Roasted Almonds Recipe

Cinnamon Roasted Almonds Recipe

  • 1 Egg White
  • 2 Tablespoons Stevia
  • 1 teaspoon Vanilla Extract
  • 1/2 to 1 teaspoon Ground Cinnamon
  • Pinch of Salt
  • 200g/7 ounces Almonds 
  1. Preheat the oven to 120C/250F and get out a baking tray, lined with well greased baking paper. 
  2. Whisk the egg white until frothy. 
  3. Add the stevia and vanilla and then whisk until smooth. 
  4. Next, whisk through the cinnamon and salt. 
  5. Finally, stir through the almonds, ensuring they are all fully coated in the eggy cinnamon mixture. 
  6. Move the almonds to the prepared baking tray and ensure they are in a single layer. 
  7. Place into the preheated oven for 15 minutes, removing from the oven, tossing the almonds around and placing back in the oven for a further 15 minutes. 
  8. Cook for 15 minutes at a time, until they are cooked to your liking. Mine took 45 minutes in total. 
  9. Remove from the oven, allow to cool completely to further crisp up and enjoy.

Hi everyone! Sam here again from Sugar Spun Run and today I am so excited to share one of my family’s favorite recipes. These peanut butter pinwheels have been in my family for generations, we make them every year around Easter and Christmas time.

I love that this is an no-bake recipe, and that’s part of what makes them a holiday favorite that I grew up making. While my mom would be using the oven to prep holiday dinner essentials, I would stay out of her way making classic no-bake treats like my favorite no-bake cookies and these peanut butter pinwheels.

There is a somewhat unexpected ingredient in these peanut butter pinwheels: potatoes.

Please, don’t be alarmed by the fact that this recipe uses potatoes!

I won’t lie, I was definitely alarmed the first time my mom ever shared this recipe with me, I actually thought she’d lost her mind. I love potatoes in savory recipes like mashed potatoes and potato soup, but potatoes in candy!?  

Trust me, it works.  The potatoes serve as the binding base for your sweet pinwheel dough, and by tasting them you’d never be able to tell that they’re the secret ingredient in this recipe.  There are a few things to take note of when making this candy, though…

How do you make Peanut Butter Pinwheel Candy

As I mentioned, you’re going to start with potatoes. Specifically, mashed potatoes.

I definitely do not recommend using leftover mashed potatoes that have been seasoned with salt, pepper, or anything else. Instead, use one or two russet potatoes, peel them, dice them, boil until tender, drain, and then mash really well. Allow these potatoes to cool completely at room temperature before moving forward.

Make sure the potatoes are completely cooled, otherwise they will melt the powdered sugar that you add and you’ll end up with a runny mess. Don’t try to speed up the cooling process by putting your hot potatoes in the fridge, as I’ve found this often causes condensation that will also make your dough too runny.

Then, add your mashed potatoes into a bowl with butter, vanilla, and powdered sugar and continue to add sugar until the dough is firm. Chill in the refrigerator for up to an hour, and then roll it out into a rectangle, spread peanut butter evenly over the center, roll it up and slice!

The dough is extremely versatile and can also be rolled into egg shapes and dipped in unsweetened or dark chocolate (another Easter favorite in my house), or rolled into cigar shapes and rolled through cinnamon (use straight cinnamon, not a cinnamon/sugar mixture, as the dough is sweet enough that a mix is not needed).

Peanut Butter Pinwheel Candies are made with an unexpected but essential ingredient. This is a family favorite recipe that’s been passed down for generations!

Serves: 40 pinwheels

Ingredients
  • ½ cup mashed potatoes*
  • ½ cup salted butter softened
  • 6-7 cups powdered sugar, plus additional for dusting
  • 2 teaspoons vanilla extract
  • Creamy peanut butter, for filling

Instructions
  1. With electric mixer, combine mashed potatoes, butter, and 1 cup sugar.
  2. Add in remaining sugar, 1 cup at a time. Start by adding 6 cups of powdered sugar, if the dough is not moldable in your hands and can’t be rolled into a ball, continue to add sugar until it is firm.
  3. Stir in vanilla.
  4. Refrigerate filling for 1 hour.
  5. Once chilled, divide dough into two pieces and place one piece on a clean surface that you’ve generously dusted with powdered sugar. Dust the surface of the dough with additional sugar, and use a rolling pin to roll dough out into a rectangle about ¼” thick. Make sure that your dough can be rolled at this point, if it’s too sticky or falling apart, you may need to add more sugar, re-shape it into a ball, and start over.
  6. Once dough has been rolled into a ¼” rectangle, spread evenly with peanut butter, leaving a small amount of space peanut butter-free around the perimeter of the dough.
  7. Starting with the longer side of your rectangle, gently but tightly roll into a lot.
  8. Use a knife to slice into pieces about ½” thick.
  9. Repeat steps 5-8 with remaining half of dough.
  10. Serve and enjoy.

Notes
Use russet potatoes, peel, dice, and boil until tender. Drain potatoes and then mash well. Allow potatoes to sit at room temperature until completely cooled before making your filling.

Brussels Sprouts are in season and incredibly cheap here in Ireland at the moment. A giant bag is only 49c, so I’ve been cooking up all kinds of sprout specialities, making use of the Brussels bounty.

The other week I shared a Cheesy Brussels Sprout Gratin and today I have a simple brussels sprout hash recipe that makes a beautiful breakfast.

I chose to also include mushrooms, onion and garlic in the easy breakfast hash. But, you can feel free to include your vegetables of choice instead. You could also finish the dish off by crumbling feta or goats cheese over the top. 

You can add water to steam/poach the vegetables, to help them to cook through without adding copious amounts of butter.

Simple Brussels Sprout Hash Recipe

  • Onion, peeled and chopped
  • Garlic, peeled and chopped
  • Brussels Sprouts, halved
  • Mushrooms, sliced
  • Eggs
  • Salt & Pepper, to taste
  • Butter, for frying 
  1. Melt butter in a frying pan and, when hot, add the onion and garlic. 
  2. Cook until starting to soften and become fragrant, then add the brussels sprouts and mushrooms. 
  3. Reduce the vegetables until almost cooked to your liking, adding more butter when needed. 
  4. Once the vegetables have cooked, move some aside to create gaps for the eggs.
  5. Break the eggs into the gaps and cook until done.

  1. Toast the almond flour in a dry pan until it’s fragrant.

  2. Add it to a bowl and add the rest of the ingredients except for butter, mixing well.

  3. Add butter and mix until the mixture will hold form.

  4. Press into pie pan. It’s ready to add your favorite filling!!

Filling
  1. With an immersion blender or regular Blender, mix the heavy cream, water and ketochow until thick and creamy like pudding.

  2. Add the flavoring and food coloring if needed.

  3. Add pudding to pie crust.

  4. Cover and refrigerate overnight but preferably 24 hours.
